Whole Cod Fish and Chips 🐟 Squirrel fish (松鼠鱖魚) is one of the first dishes I tried after landing in China 9 years ago. It was like nothing I’d ever tasted, and to this day is the most unique fish presentation I’ve ever seen. They remove the back bone, make criss cross slices, deep fry and top with a sweet and sour sauce. To be honest, the real thing looks way cooler than my attempt in this video. In this video, the Chinese squirrel fish pattern was the inspiration but with a western twist. I

whole cod fish and chips carefully separate and remove the backbone make some crisscross slices without piercing the skin for more surface area simple batter with some osmo and a dark beer let that rest and time for pickles pickles are pretty forgiving i like adding a bunch of garlic and dill the measuring is optional but gotta make sure they fit one week later we have some homemade pickles which we'll add to mayo dill and lemon for our tartar sauce for the chips part boil some potatoes get some nice color and add some butter garlic and herbs get that batter in all the crevices and carefully fry until golden brown it takes a little extra work but the result is truly a show-stopping way to do a whole fish
